Lamb Burger with Mint Yogurt Sauce

1 cup Greek yogurt
1/2 lemon, juiced
1/2 cucumber, seeded and small cubes
1 teaspoon chopped fresh mint


2 lbs Willy’s ground lamb
1 shallot, finely chopped
2 cloves garlic, finely minced
1 teaspoon dried thyme
Olive Oil to cook with
Pita Bread to serve, toasted if desired

In small bowl, combine first 5 ingredients and set aside.  In medium bowl, combine lamb, pepper, shallot, garlic, and thyme and form into patties to fit into 1/2 pita breads.  Grill lamb patties until cooked through (about 5-6 minutes per side). Serve lamb patties in warmed pita breads with Yogurt-Mint Sauce!  Yum!
